English here: Almond-mazarin with chili and fruit or berries
The first of a series of cakes which I am about to develop, which does not contain white sugar, butter and eggs – but lots of other goodies instead . There is no compromise on the taste and I try to fill them with my favorite ingredients.
Here's my idea of a really spongy and 'heavy' almond mazarin cake which gets a fresh tinge from some nice berries or other fruit. A discreet chili spice gives an extra touch, I believe.
Ingredients:
200 g almonds
10 – 15 Dates, pitted (weight approx 200 gr without pits)
2½ dl water
100 g coconut oil . a little extra for the form
60 gr Sukrin+ (sweetener made from erythritol and stevia – the amount here is equivalent to 120 gr sugar)
200 gr organic wheat flour
Fresh chili or chili powder to taste – i.e.. 1/4 – ½ teaspoon chili powder first time
1 – 1½ tsp almond essence / almond flavoring
2 topped teaspoons baking powder
1 tsp vanilla powder
2 apples
Approximately 500 gr of fruit or berries (frozen is OK, thawed and drained)
How to:
Grease the baking dish with coconut oil or cover it with baking paper.
Clean fruit / berries so they are ready. Cut fruit into small pieces.
Blend the almonds into flour in the food processor. They should be blended until they are completely crumbled and just begins to accumulate again.
Add the dates and 1 cup water and blend to a smooth paste – the dates must be blended to a pulp. If necessary,, then add a little more water.
Add the last 1 ½ cups water, melted coconut oil and almond flavoring and blend a few quick laps so it is well stirred into the mass.
In a bowl mix flour, sukrin , chili, baking powder and vanilla powder. Add the wet part of the batter and stir it all together .
Grate the two apples and stir them into the mix. They should not be peeled before grating.
Mix berry/fruit pieces in and pour the batter into a form of about 24 x 24 cm.
Bake at 175 degrees for about 45 – 60 minutter – baking time depends on how much fruit and berries that have been put in and the type of baking dish you use. Test with a clean wooden skewer if the cake has been baked enough after about 30 minutes the first time you bake it. It depends on the above and your oven how long it will take exactly. If there is dough on the skewer, bake for a little longer in the oven and test again until it is done. If the cake has got the right color on top before it is baked, then cover with a loose sheet of greaseproof paper the rest of the baking time. I think that typically occurs after about 30 minutes.
It will serve 9 large pieces, 12 medium eller 16 små af denne portion.
