The filling can be used in chilies of just the hotness that you prefer – they just need to be large enough so that it makes sense to fill them. We think that Jalapenos (preferably the larger ones) is perfect in size and hotness – but there's also so many other options. Ingredients: Hokkaido, goat cheese, black pitted olives, fresh or dried oregano, garlic, salt, olive oil

How to: Wash and core the hokkaido. It should not be peeled, but perhaps cut off. any spotted parts. Cut it into pieces and toss it with a little olive oil. Bake the pieces until tender in the oven at 200 degrees for about 30 minutes and allow to cool slightly or completely before use. Blend Hokkaido with garlic, salt and oregano – you decide how fine you blend it. Crumble the goat cheese and fold into the mixture. Add the stuffing to the halved and cleaned chili and gently push olives into the mixture . Grill / bake them in a closed grill or oven.

  1. Vivi, jeg spekulerer en del på at udskifte nogle ingredienser. Jeg kan se at du ofte vælger rigtigt gode råvarer, og nogle der er relativt dyre, feks Risvinseddike eller feks Palmesukker. Det gør helt sikkert en forskel, men har du erfaring med de lidt billigere almindelige alternativer? Feks alm hvid husholdningseddike eller alm raffineret sukker? Jeg skal nemlig til at lave nogle af dine hotsauce-opskrifter.

    • Du kan sagtens udskifte ingredienserne med billigere alternativer og få et godt og lækkert resultat.
      Smagen vil være en anden. Nogle af de ingredienser som jeg vælger er ud fra en overbevisning om at jeg vil have så rene og gode råvarer som muligt, andre er for at skabe en særlig smag. Hvidt sukker smager anderledes end palmesukker som er meget mere nuanceret og interessant i smagen og risvinseddike har en anden smag en almindelig lagereddike. Det betyder ikke at man ikke kan bruge de billigere ingredienser og få et resultat som man kan lide.
      Hvis du har mulighed for at handle i en asiatisk butik er netop de to ting her som du nævner ikke særligt dyre – hvorimod de måske godt kan være det hvis de findes i en dansk butik. Men som sagt kan du sagtens erstatte dem med noget andet hvis du har lyst.
