Most of the recipes on this site are my own, some are borrowed and adjusted and some are plain borrowed . In the latter case, I have written where the original recipe can be found - if known to me.
When chili is mentioned in a recipe, use whitchever chili you like, in the preparation you prefer – and as much of it as you like. I may give you suggestions – but you might think differently. Some times I prefer to use whole chilies – maybe you prefer them without placenta, white parts and seeds – or maybe as dried and powdered.
Some times I use one flavourprofile – you may prefer another.
Once in a while I use blended chili – made by processing the chili, with or without white parts and seeds – in a foodprocessor. That lillte one that comes with most hand blenders will be great at this. Otherwsie the chili can be chopped very fine with a knife, until it almost is a mash.
Chilijuice which I may use especially in desserts, is made by first making chilimash – and then squeezing the juice through a clean, piece og fine mesh or a small fine sieve. You can use a clean dish cloth if you don't have anything else for this task. Of course juice chilifruits are the easiest to use for this – but alternatively it is possible to blend the chilis with a little water or oil (yes, water does work – selv om capsaicinoiderne er fedtopløselige).
